Olympic Fever!


We have caught the Olympic fever over at the Rappaport house.  WE have watched the opening ceremony 3 times, watched alpine skiing, figure skating, speed skating, and anything else you can think of.  We had an Olympic story time on Monday where they made torches Jude promptly pulled all of the streamers off his and announced "Don't like!") and read How To Train With A T. Rex And Win 8 Gold Medals by Michael Phelps.

Today we had an Olympics Playgroup, Shanna brought Olympic Gold Medals (Leftover Hanukkah Gelt with ribbons glued to them - great idea!) and all of the kids made their own Olympic Flags.  We watched the opening cermonies and the kids played with every toy in the house.  A good time was had by all (I have no ides whey every word is in caps!)

What have you been up to?

It has been a crazy few weeks for the St. Louis Rappaports.  We sold out house, looked at what seems to be every house for sale in Webster & Kirkwood, Brian went to Miami for 4 days, and we put in a contract that was accepted on a house in Kirkwood.

New Home!



Well we finally have an accepted contract on our house and have put in a contract that was accepted on a house in Kirkwood.  The new house will need some TLC but it is in a great neighborhood, in a fantastic school district and had a great yard!

Science Center Here We Come!


Well as we near the end of our Science Center Membership (and it is smoking from all the use) we went to see the Planeterium with our friends Shanna, Aiden & Reese and we unexpectedly ran into our friend Erin with her kids, Maddoc, Kennedy, Hennessey, Lochlan, and Rafferty (Teaghan was at home).  We really never venture over there so we decided to see Mr Hubble's Universe (a movie made for older kids for sure) and take in the fun stuff on the bridge.  They had a great time playing with the Legos in the room at the movie and were exhausted when we left.  Thanks to our friends for a great day!  Hopefully we can get them to go see an IMAX movie this week with us.

2010!!!



This year for New Year's Eve we have a few friends over for some food and fun.  Shanna & Darryl Gorley and Justine Sweeney & Michelle Maul came over with their children.  6 adults and 6 kids.  The kids played with every toy in the closet and the basment, watched a couple movies and stayed up until after 1AM!  The parents starey up past 10PM!!!  YEAH!!!  Quite a feat over the past few years.  We had some great food, played Cranium and had a blast.  Shanna and Darryl had to act out milking a cow, Justin and Michelle hummed a few tunes and Brian and I were the masters at drawing and guessing our clues.  Sahnna & Darryl were victorious but I think a good time was had by all.

Christmas Fun!

Better late than never.  From Mid December to this past weekend it has been a crazy busy time for us.  Four holidays, 1 birthday, and a trip to Philly, PHEW.  I posted about Hanukkah and Jude's 2nd birthday.  Here is the lowdown on Christmas.  We went to my Uncle Charlie & Aunt Amy's house on Christmas Eve.  It was terrible weather.  It rained hard the whole way there (If it had been cold enough we would have been burried in snow).

The boys had a wonderful time playing with all their cousins.  We had a good time talking with all our Aunts, Uncles and older cousins.  Truth be told I can not wait until Abe and Jude a a bit older so I can really enjoy family parties again without tracking them and cleaning up their messes the whole time.

Christmas Day was fast a furiuos until abotu 11 am and then it became a very relaxing day.  We spent the night at my parents house (as we do every year) and Santa brings everything there.  Dawna and her family came over for a couple hours before going to Jon's family festivities.  All day the boys played with, and fought over their new toys.  Eight million toys and they still want to play with the same thing!  Finally we ate dinner with my parents (Thanks mom for making Brusaloni) and headed home.

All in all it was a great holiday, we missed our family that was not able to make it in (although we had another Christmas on Jan 2nd) and we espically missed Grandma & Grandpa Ferguson this year.  Somehow I do not think Christmas will ever be complete again, it will be fun because it can not help but be with all these amazing children running around but a large part is missing.  I love them and miss them so much!

Great Appetizer Recipe - Southwestern Egg Rolls





If you like Chili's Southwestern Egg Rolls you will love this recipe!

Ingredients
·         2 tablespoons vegetable oil
·         1 skinless, boneless chicken breast half
·         2 tablespoons minced green onion
·         2 tablespoons minced red bell pepper
·         1/3 cup frozen corn kernels
·         1/4 cup black beans, rinsed and drained
·         2 tablespoons frozen chopped spinach, thawed and drained (I also used shredded carrots in a pinch)
·         2 tablespoons diced jalapeno peppers
·         1/2 tablespoon minced fresh parsley (I omitted this)
·         1/2 teaspoon ground cumin
·         1/2 teaspoon chili powder
·         1/3 teaspoon salt
·         1 pinch ground cayenne pepper
·         3/4 cup shredded Monterey Jack cheese (I used the Mexican blend of shredded cheese)
·         5 (6 inch) flour tortillas (I used Egg Roll wrappers instead)
·         1 quart oil for deep frying (I used the oil to brush on the bottom of the pan and on the tops of the egg rolls and baked for 10 min or so until they were light brown)

Directions
1.     Rub 1 tablespoon vegetable oil over chicken breast. In a medium saucepan over medium heat, cook chicken approximately 5 minutes per side, until meat is no longer pink and juices run clear. Remove from heat and set aside.
2.     Heat remaining 1 tablespoon vegetable oil in a medium saucepan over medium heat. Stir in green onion and red pepper. Cook and stir 5 minutes, until tender.
3.     Dice chicken and mix into the pan with onion and red pepper. Mix in corn, black beans, spinach, jalapeno peppers, parsley, cumin, chili powder, salt and cayenne pepper. Cook and stir 5 minutes, until well blended and tender. Remove from heat and stir in Monterey Jack cheese so that it melts.
4.     Wrap tortillas with a clean, lightly moist cloth. Microwave on high approximately 1 minute, or until hot and pliable. (Once again I skipped this step and used egg roll wrappers instead)
5.     Spoon even amounts of the mixture into each tortilla. Fold ends of tortillas, then roll tightly around mixture. Secure with toothpicks. Arrange in a medium dish, cover with plastic, and place in the freezer. Freeze at least 4 hours. (I also skipped this step and followed the instruction on the egg roll wrappers to seal them)
6.     In a large, deep skillet, heat oil for deep frying to 375 degrees F (190 degrees C). Deep fry frozen, stuffed tortillas 10 minutes each, or until dark golden brown. Drain on paper towels before serving. (I brushed the pan with oil and then the tops of the egg rolls and baked at 450 for 10 min until they were golden brown)

I served this with Hidden Valley Fiesta Ranch thinned with a little milk to make a sauce.

The Zhu Zhu Pet is Here!

For Hanukkah Abe and Jude (Abe mainly) got a Zhu Zhu Pet.  It was a long anticipated gift that I thought he had forgotten about until he started asking for it again a few weeks ago.  Abe was so excited and Jude loved to watch it zoom around the house.  It came with the predetermined name of Num Nums, Abe did not like it, so we ventured into the process of naming the pet.  The choices were Zioe, Sparkley, Georgie, Squeeky, Speedy, Diamond, Brightly, Strawberry, Peach. Daisy. Bo.Alberta (after Albert Pujols), and Face (Hey I just write them down).  He settles on Daisy, then later in the evening Bo and then finally Speedy felt right.  This is my kind of pet, it does not eat or poop, does not need to be walked and your can turn it off and put it in a closet!

For those of your who do not know what they look like, yes this is what all the rage is about!

Lighting the candles is serious business!

Every night this week we have lit the candles for Hanukkah.  The boys love to help.  It is funny to see the difference in them.  Abe is serious and concentrated, Jude is joyful and not too careful as a two year old should be.
